What do you get when you combine kale + apple juice + frozen watermelon cubes? A Kap-melon Smoothie.


1 cup of fresh Kale

1/2 cup of apple juice (more if needed)

1 cup frozen watermelon


Put all the ingredients in your blender or food processor and mix until smooth. Enjoy!


  • 3 servings of fruits and vegetable which is more than have of the recommended 5 a day.
  • Kale is high fiber, vitamins and minerals such as calcium, vitamin K & C. It is also known for its anti-inflammatory properties. More info here
  • Apple Juice is high in vitamin C and believed to increase acetylcholine in the brain which increases memory. (If you are a diabetic, you can replace the apple juice with water and add a dab of honey if needed.)
  • Watermelon- also high in Vitamin C and water content

In case you are wondering, “kap-melon” is a word I made up.  Why? I’m glad you asked. I just felt like it. It sounds better than “kale apple watermelon smoothie.”

It is delicious, the apple juice and watermelon offsets the slight bitterness of the kale. Because of its high water content, the frozen watermelon also adds a nice smoothie-type texture to this nutrient packed beverage.
